Green Juice is perfect for summer time. I always try to have a couple of weeks in the summer where I make and consume both red and green juices. What I love about Green juice is it’s versality, if you don’t have an ingredient, no problem substitute it or leave it out.

It’s easy to prepare.
Base ingredients for a Green Juice:
Apples
Pears
Celery
Spinach
Lettuce
Cucumber
Kale
Lemon
Honey
Mineral Water or filtered water
Other ingredients that can be added include Nettle, Raspberry Leaf, and organic vegetable or herb powders.
I like easy recipes as a busy mom of 2 so I find this a great way to get some well needed nourishment. All I do is dice everything into small squares and add it to my blender with 1-2 pints of water. I also added ice cubes to my blender this way the drink is cold upon completion. A fun way to take the juice is to pour it into shot glasses, my kids love to take my juices this way. A shot glass gives you that natural energy and vitamin boost but is such a small portion that even the fussiest of people (like my fussy kids who are turned off by the sight of anything vegetable and leaf like) can’t complain about a drink that takes a few seconds to down.
I was super pressed for time, this time so I poured the juice through unbleached cheesecloth. I don’t like my juices too think so I discard the pulp. When I have more time I usually allow the juice to drip through a mesh sieve and I use the back of a spoon to press it through and discard the pulp. I give this juice to my kids and my parents and I personally drink it by the pint. I will have 1-2 pints in a day. I usually make 1-2 pints at a time or a jug full and store it in the fridge. I added coconut and pineapple juice, you could change out the water for apple juice, orange juice or any other juice you like or use a combination of juice and water. I added some of my Hawthorn Oxymel to the juice and sweetened the juice with honey. This is a refreshing drink best served chilled on a hot summers day but it is still beneficial all year round. You can also use the fruits that are in season to create a seasonal fruit juice or focus on the vitamins and minerals that you feel you need and use fruits and veg that contain those vitamins and minerals.
