Oxymels: The fun way to get your vitamins and minerals

Oxymels only need 3 ingredients

Equal parts Herb+Honey+Apple Cider Vinegar

Oxymels are an age old remedy that can be taken as a 5 ml dose once or twice a day. An Oxymel combines the sweet taste of the honey with the sour taste of the apple cider vinegar giving us a sweet and sour herbal infusion. The word Oxymel comes from the Ancient Greek words for “acid” and “honey” the word “oxy” means “acid” and “mel” means “honey”. Oxymels can make a herb more palatable and exciting. The honey and vinegar become the menstruum that extracts the minerals and vitamins out of the herb or plant and into the honey and vinegar. Both honey and vinegar can be used as a way to extract the vitamins and minerals and beneficial constituents.

Apple Cider Vinegar (ACV) with the Mother is used in the Oxymel process. It is a cloudy Apple vinegar that tastes different to your regular clear or brown vinegar. ACV when added to salads helps to release alkaloids, sugars, tannins and minerals out of the plant and into our bodies when combined together, which aids digestion. The Acetic acid in the Apple Cider Vinegar along with other microbes break down the alkaloids and minerals and move them into the ACV transferring the benefits.

The honey also extracts some properties out of the herb used. Honey takes longer to extract the constituents. Raw honey is the best to use. I have just used some low cost honey but the more expensive raw organic honey is the best to use as it retains much more of the beneficial qualities. When honey combines with the vinegar it looses some of it’s thickness which helps the extraction process. The honey and ACV together provide a powerful combination of antifungal and antibacterial properties. Tinctures are great and they use alcohol but oxymels can be taken by kids and people who don’t want to consume alcohol plus they provide the mentioned benefits. Oxymels can be added to smoothies as a few spoons or more to sweeten the smoothie or juice.

For my Oxymel I decided to create 3 small batches

Hawthorn Berry Oxymel

Rose Petal Oxymel

Hawthorn Berry, Hawthorn Leaf and Rose Petal Oxymel

Hawthorn Berry in an Oxymel

Hawthorn berries (Crataegus monogyna / Crataegus laevigata) are a powerhouse for heart health—both physically and emotionally. Rich in flavonoids and antioxidants, they strengthen the heart muscle, improve circulation, and help regulate blood pressure. They also soothe anxiety, grief, and emotional overwhelm, making them a key ally for emotional resilience.
When infused into an oxymel—a traditional blend of raw honey and vinegar—hawthorn’s active compounds are gently extracted into a sweet-tart tonic. The honey provides soothing and immune-supportive properties, while the vinegar boosts mineral absorption, creating a deeply nourishing heart tonic. Taken regularly, hawthorn oxymel supports the cardiovascular system, eases heart palpitations, and promotes a sense of warmth and vitality in the body.

Another great combination is Nettle and Dandelion Leaf and Or Root.

Nettle and Dandelion Root in an Oxymel

Nettle leaf (Urtica dioica) is a deeply mineral-rich herb, packed with calcium, magnesium, potassium, and iron—making it a tonic for the blood, kidneys, and nervous system. It is strengthening, energizing, and excellent for rebuilding vitality after illness or burnout.

Dandelion root (Taraxacum officinale) supports liver and digestive health, helping to detoxify the body while stimulating bile production for better fat digestion. It is also a gentle diuretic, aiding in fluid balance and reducing puffiness or water retention.

Together in an oxymel, nettle and dandelion root create a nutritive, detoxifying, and energizing tonic that supports overall vitality. The vinegar draws out the minerals from nettle and the bitter liver-supportive compounds from dandelion, while honey rounds the flavor and adds immune-boosting benefits.

Whichever herb or plant you use when combined with the Apple Cider Vinegar you get a powerhouse mix that you can easily take to support your health.

Benefits of Organic Apple Cider Vinegar with “The Mother”

Organic apple cider vinegar (ACV) with “the mother” contains a natural web-like structure made up of beneficial bacteria, enzymes, and proteins formed during fermentation. This “mother” is a living probiotic that supports gut health, aids digestion, and enhances nutrient absorption.
Ingesting 1–2 tablespoons daily can:

  • Support healthy blood sugar balance
  • Boost digestion and nutrient uptake
  • Aid gentle detoxification
  • Support immune health
  • Promote a healthy gut microbiome

You can take it diluted in warm water, add it to herbal teas once cooled, blend it with honey in an oxymel, or use it as a base for salad dressings.

Benefits of Honey and the Best Types to Use

Honey is a natural humectant, antibacterial agent, and energy source. It contains antioxidants, enzymes, vitamins, and minerals that support immune function, promote wound healing, and soothe the throat. When used in an oxymel, honey not only improves taste but also acts as a preservative and enhances the medicinal qualities of herbs.

The best honey to use for medicinal purposes is raw, unpasteurized, and ideally local to your region. Manuka honey is highly valued for its strong antibacterial properties, but local wildflower or heather honey is excellent for supporting the immune system and reducing seasonal allergies. Avoid supermarket honey (like the one I used) that has been heat-treated or overly filtered, as this process destroys many of its natural enzymes and nutrients.

Ways to Take an Oxymel

  1. By the Spoonful – Take 1–2 teaspoons straight for a quick energy and immune boost.
  2. In Warm Water – Dilute in a cup of warm (not boiling) water for a gentle tonic drink.
  3. In Sparkling Water – Add to sparkling water for a refreshing herbal soda.
  4. In Tea – Stir into cooled herbal tea for extra flavor and benefits.
  5. On Food – Drizzle over salads, roasted vegetables, or grains for a tangy nutrient boost.
